Candied muffins, a simple recipe according to which you can quickly prepare a delicious and simple dessert for tea, and if you put the pastries in beautiful paper tins, the dish will be ready for the festive sweet table.
The word muffin has either French or German roots, but in both cases it was called the type of bread. In this recipe for muffins, I propose the American version - small sweet muffins (they can be unsweetened, also delicious) based on a test of sour cream with baking powder and soda - practical and quick food, a quick housewife will have time to cook them for breakfast. By the way, English muffins are made from yeast dough, in my opinion, they look like brioche.
There are many varieties of muffins - with blueberries, with chocolate, you can’t list everything. In this recipe, a beautiful and tasty supplement is multi-colored candied pineapple.

Ingredients for Candied Muffins
- 250 g of wheat flour;
- 170 g of granulated sugar;
- 50 g of fat sour cream;
- 130 g butter;
- 30 ml of olive oil;
- 3 eggs of chicken;
- 5 g ground cinnamon;
- 25 g of orange powder;
- 150 multi-colored candied fruits;
- salt, soda, baking powder, powdered sugar.
Method for making candied muffins
We measure granulated sugar, break the chicken eggs. Two large eggs for muffins are enough, three small ones are needed. Mix eggs with sugar with a regular whisk. If you cook muffins in a food processor, you can take turns loading the products into the bowl and mixing everything together, so to speak, in bulk.
Next, add fat sour cream. It is important to put some dairy product in the dough - sour cream, kefir, yogurt, whose acid, under the influence of high temperature, will react with baking soda. As a result, the baking will be magnificent.
Heat the butter in a water bath, when it melts, add olive oil, pour the mixture into a bowl.
Then pour the sifted wheat flour, add the baking powder of the dough (aka baking powder). Pour natural flavors - ground cinnamon and orange powder.
Knead the dough for muffins, it does not need to be mixed for a long time, 2-3 minutes are enough to make it homogeneous, without lumps of flour.
Cut pineapple of different colors into small cubes, the more color, the more beautiful the pastries!
Add candied fruit to the dough for muffins, mix so that they are evenly distributed.
We grease silicone molds with refined olive or vegetable oil. In each form we put about a tablespoon of dough, leave free space so that the muffin had a place to go up when baking.
In a gas oven, I advise you to put silicone molds on a baking sheet made of thick metal or place them in metal molds so that the muffins do not burn, since there is a lot of heat from below.
We heat the oven to 160 degrees Celsius, bake muffins for 25 minutes until golden brown.
When the muffins have cooled, sprinkle with powdered sugar, transfer to beautiful paper molds and serve.
Muffins are well kept. Open a large metal box with a cookie cover for these purposes, and you can enjoy a delicious dessert for several days.
