Light strawberry tiramisu without eggs with ricotta and cream
Strawberry tiramisu with ricotta and cream is an easy dessert for those who do not like coffee or have to give it up for some reason. If coffee is not in your diet, this is not a reason to refuse your favorite dessert, because you can come up with different syrups, for example strawberry, to soak biscuit cookies.
The cream for tiramisu in this recipe without eggs is such a violation of the tradition that many will appreciate. I do not like raw eggs in a cream, so I try to get out of this situation in every way - beat the yolks and squirrels separately in a water bath with sugar, prepare a custard. However, it is much easier and faster to add a thickener to the cream, whipped cream will turn out to be thick, the cream is very lush and thick, and it takes half as much time to prepare your favorite dessert. Cream with ricotta is light and less caloric than with mascarpone.
You can take ready-made Savoyardi cookies for tiramisu, but it’s easy to bake it at home, I’ll share the recipe somehow - this is the simplest dry biscuit.

Ingredients for Strawberry Tiramisu without Eggs with Ricotta and Cream
- 10 pieces of cookies "Savoyardi";
- 250 g of 40% ricotta;
- 200 ml of 20% cream;
- 30 g of powdered sugar;
- 100 ml strawberry syrup;
- 40 ml of whiskey;
- 2 teaspoons cream thickener;
- 100 g of fresh strawberries;
- vanilla extract.

Pour 20% cream into a deep container, add a cream thickener, a few drops of vanilla extract and a tablespoon of powdered sugar. Whip the cream for 5 minutes until they thicken - on the whipped cream, traces of the whisk do not spill.
In a separate bowl, spread the ricotta for tiramisu, add the remaining powdered sugar, beat for several minutes, the mass should also turn out to be quite lush and airy.
Gently mix the cream with cheese - you get a tender, lush, light and airy mass, and the fat content will be slightly less than in a traditional dessert.
Pour strawberry syrup into a bowl, add whiskey.
Strawberry syrup for tiramisu is easy to cook at home - bring 100 g of sugar and 40 ml of filtered water to a boil, add 100 g of fresh strawberries, boil for 5 minutes, let it brew for 20 minutes. Remove the berries with a slotted spoon, and strain the syrup through a sieve or cheesecloth and cool.
On a plate or dish for the cake, put 1 3 cream. Svoyardi biscuit cookies dipped in strawberry syrup with whiskey, put 5 cookies in a row.
Then on this row of cookies we put 1 3 cream, on top of another 5 cookies, soaked in strawberry syrup from whiskey.
The last layer of Savoyard is covered with the remaining cream. You can fill the cream with a confectionery bag with an asterisk nozzle and deposit it on the cookies with curly curly balls.
Cut ripe strawberries into thin slices, spread a layer of chopped strawberries on top of the tiramisu.
We remove the strawberry tiramisu in the refrigerator for 4-5 hours, during this time the biscuit cookies will soak well, become tender and moist, the cream will cool and harden.
Serve a dessert with a cup of aromatic herbal tea. Enjoy your meal!
